How do I make my cake smooth!? I am making a cake and I know that you can add some part of an egg to make it like smoother and not less fluffy but more like a cake you would buy at a store in stead of it being all crummy and kinda flaky!. also with Icining it I need help because everytime I go to icining it the cake gets crummy once again and gets all in the icining I need major help please!Www@FoodAQ@Com


Answers: for a more dense/less fluffy cake use only yokes

to keep your icing from picking up the crumbs as you ice, take a pastry brush and brush off loose crumbs then spread on a glaze(really thin icing) melt in microwave about 1/2 c!. of your icing!. Then ice your cake with the thicker icing!.Www@FoodAQ@Com

You need to beat cake batter AT LEAST 3 min on a stand mixer (closer to 5 min is better), to get all the air incorporated into the batter, for a light & fluffy cake!. You'll notice a difference in the batter after 3 min!. You can also replace some of the liquid (milk, water) used with sour cream, if you want it richer & smoother !.!.!.!.!.!.!.To ice it: brush all the crumbs off; put the layers together with a thin layer of icing and spread the top & sides with a very thin layer of icing (to keep the crumbs in) and let it set about 10 min!. Then ice it with a baking spatula or butter knife!. HINT: put strips of waxed paper or tin foil under the bottom edges of the cake, to catch any drips!. When you're done, pull the strips out and your plate stays clean:)Www@FoodAQ@Com
