I love grits any style but one of my favorite ways is using yellow stone ground grits cooked in salted water with whole butter (I use European style PLUGRA butter), once the grits are done I shred some sharp cheddar cheese on top.
These grits are great with eggs in the morning or as a side dish with pork or chicken.
If you make more than needed you can spread the excess onto a shallow food pan or cookie sheet, wrap, refrigerate overnight, then the next day you can cut the grits with a ring mold and shallow pan fry in butter so you essentially have a "grit cake"

skim milk..nice and buttery..accompanied by thick cut virginian ham steaks and
