Slow cooked over an open spit.
Our family always roast a pig on a big open fire for about 10 -12 hours. You will need about a cord of hard wood to burn for a 80-90 lb. pig. We put a 1-1/2" stainless rod thru it and is turned by a very small, slow moving motor at about 10 RPM, we used to do it by hand. We season it with herbs and oranges in the body cavity. Make sure to wrap the body with chicken wire so it does not fall apart while roasting. Keep the heat nearer the hips and shoulders, the middle will always be done first. The best part - hanging out and having a beer or two while telling stupid stories we've all heard 10 times.

In Miami we used a roasting box called "Caja China" that did some voo-doo type magic on a pig. Between the sour orange and garlic mojo to the top heat (thats what's different about this cooker - the heat is from coals placed on the top) it is awesome for cooking pork.

And onadad - that's my kind of party...sitting around roasting a pig, drinking beer and telling stories.
