Greek Burgers
Makes 4 servings (2 halves each)


Ingredients
Yogurt Sauce (recipe follows)
1 pound ground beef
2 tablespoons red wine
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano leaves
2 teaspoons ground cumin
1/2 teaspoon salt
Dash ground red pepper
Dash black pepper
4 rounds pita bread, halved and split
Lettuce
Chopped tomatoes





1. Prepare Yogurt Sauce.

2. Soak 4 bamboo skewers in water about 20 minutes. Combine ground beef, wine, oregano, cumin, salt, red pepper and black pepper in medium bowl; mix lightly. Divide mixture into eight equal portions; form each portion into an oval, each about 4 inches long. Cover; chill 30 minutes.

3. Preheat grill. Insert skewers lengthwise through centers of ovals, placing 2 on each skewer. Grill over medium heat, covered, 8 to 10 minutes (or, uncovered, 13 to 15 minutes) to medium doneness (160°F), turning once. Fill each pita bread half with equal amounts of lettuce, meat and chopped tomatoes. Serve with Yogurt Sauce.



Yogurt Sauce
Makes about 3 cups

Ingredients
2 cups plain yogurt
1 cup chopped red onion
1 cup chopped cucumber
1/4 cup chopped fresh mint or 1 tablespoon plus 1-1/2 teaspoons dried mint
1 tablespoon chopped fresh marjoram or 1 teaspoon dried marjoram

Combine ingredients in small bowl. Cover; chill up to 4 hours before serving.

4 Leaves green leaf lettuce
16 oz Roast Beef
1 c Chopped tomatoes
12 Pepperoncini peppers; sliced
12 Greek black olives; pitted and sliced
1/4 c Crumbled feta cheese
1/4 c Bottled vinaigrette dressing
1 tsp Dried oregano leaves

On open sub rolls, place lettuce leaves and top with roast beef. Sprinkle on tomatoes, peppers, olives and cheese. Sprinkle each sandwich with 1 tbsp dressing and 1/4 tsp oregano.
