Homemade Cheesecake with Raspberry and Chocolate Sauce

3 (8-ounce) packages cream cheese, softened
4 eggs
1 cup sugar
1 pint sour cream
1 teaspoon vanilla
1 (10-inch) Graham Cracker pie crust
1 pint raspberries
1 cup sugar
2 cups water
Your favorite chocolate sauce
Heat oven to 350 degrees F.
Beat cream cheese, eggs, sugar, sour cream, and vanilla until smooth. Pour over piecrust and bake for 50 minutes (until center is set). To prevent cake from cracking, place shallow pan half full of hot water on lower rack of oven during baking.
Cool the cheesecake on a rack for 1 hour then refrigerate for at least 3 hours until cold.
To prepare Raspberry sauce: In a small saucepan, combine raspberries, sugar, and water. Bring to a boil. Reduce to a simmer and reduce mixture by 1/2.
To Plate: Serve a wedge of cheesecake with pool of each sauce on the side.

2 cups vanilla wafer crumbs
1/2 cup butter or margarine, melted
1 (14 ounce) package caramels
1 (5 ounce) can evaporated milk
2 cups chopped pecans, toasted and divided
4 (8 ounce) packages cream cheese, softened
1 cup sugar
2 teaspoons vanilla extract
4 eggs
1 cup semisweet chocolate morsels, melted and slightly cooled
whipped cream, optional
Combine crumbs and butter; blend well.
Press into the bottom and 2 inches up the sides of a 10-inch springform pan.
Bake at 350 degrees for 8-10 minutes or until set; cool.
In a saucepan over low heat, melt caramels in milk, stirring until smooth.
Cool 5 minutes.
Pour into crust; top with 1 1/2 cups of pecans.
In a mixing bowl, beat cream cheese until smooth.
Add sugar and vanilla; mix well.
Add eggs, one at a time, beating well after each addition.
Add chocolate; mix just until blended.
Carefully spread over pecans.
Bake at 350 degrees for 55-65 minutes or until filling is almost set.
Cool to room temperature.
Chill overnight.
Ganish with remaining pecans and whipped cream if desired.
take 1 square of the cream cheese, small container of cool whip, couple TSP of vanilla, sugar to taste (add as much as YOU need / desire) , whip it all up, pour it in a graham cracker pie crust shell, pour ur topping ontop ( cherries, strawberries, blueberries, chocolate, etc.), then refrigerate.

1 box white baking chocolate., melted (8 1-oz squares. Sometimes, I double this ingredient)(microwave, stir every 30 seconds to prevent scorching, let the chocolate cool a bit)
I beat the eggs first to make sure they get well-blended. Then I throw everything else in the bowl, and beat just til well-blended. Do not over-beat. Just until smooth.
Pour over (baked) crust.
Bake at 325 for 1 hour and 5 minutes or until center (middle 2 inches) is almost set, if using silver pan. Bake at 300 for 1 hour and 10 minutes if using dark pan.
I start checking at about 55 minutes, as ovens VARY.
I also use an oven thermometer.
Some people put the cheesecake on the middle rack, and a pan of water below it on the bottom rack (in the oven) to prevent drying and cracking.
If it browns a bit on the top before the center is almost set, that's OK. Just a BIT.
Cool, the refrigerate from 4 hours up to overnight before serving.
Tastes best at room temperature. Take it out of the fridge and let it warm up a bit before serving.

1 1/4 cup Oreo Cookie Crumbs
1/4 cup sugar
1/3 cup melted butter
Combine and press into pie plate, bake in oven at 350 for 10 minutes. (This is the only baking you have to do)
1 pkg Dream Whip
1 pkg Philly Cream Cheese
1/2 cup icing sugar
1 bag mini oreos, crushed (some extra to garnish)
1 cup Oreo Crumbs
Prepare the Dream Whip as specified on pouch. Cube the cream cheese and microwave until slightly soft. Beat, then add to dream whip. If you don't soften the cream cheese, and beat it seperately first, it will be lumpy or chunky in your pie. Add the icing sugar to the whipped mixture. Add crumbs and crushed cookie pieces. Pour into crust, add whole cokies to top and drizzle with melted chocolate. Put into fridge / freezer for 4 hours / overnight to firm.
