I know what you mean about the store ones not tasting right. What I usually do is get a carton of heavy cream, add a little milk to it, then add some parmesean cheese and break up slices of american cheese. I also add a little garlic powder to it to give it a light garlic flavor. Let it get to boiling so it thickens up, but don't put the flame on too high. This is a quick and easy way to do it, and I do it this way all the time. I think the store brands have too much salt and the taste just isn't right.

saute some finely chopped garlic (about 2 cloves) in a small pat of butter. when the garlic is translucent, add about 2 tbsp butter, and 1/4 cup all-purpose flour. stir and cook the mixture for 2 minutes over medium.

then add 1.5 cups milk- most recipes call for heavy cream, but i use regular 2% to cut down on the fat. the flour become a thickening agent so the cream isn't needed. stir until the mixture thickens over medium-low heat.

now you can throw in some parmesean cheese, or sun dried tomatoes, or spinach - anything you want. if you want to keep the sauce pure white, season with white pepper.

last, adjust with salt to taste.

it's so easy and a really flexible recipe.

1/2 cup butter
2 Tbls. cream cheese
1 pint heavy cream
1 tsp. garlic powder
salt - to taste
black pepper - to taste
2/3 cup grated Parmesan OR Romano cheese - preferably fresh
1 Lb. fettucine - prepared as directed

-In a medium saucepan, melt butter.
-When butter is melted, add cream cheese.
-When the cream cheese is softened, add heavy cream.
-Season with garlic powder, salt, and pepper.
-Simmer for 15 - 20 minutes over low heat, stirring constantly.
-Remove from heat and stir in parmesan.
-Serve over hot fettucine noodles.

Alfredo Sauce
3 Tablespoons butter or margarine
1/3 cup mince shallots or green onion (white & green parts)
1 1/4 cups heavy cream
1 cup light cream or half&half
1/2 teaspoon salt (or more to your taste)
pinch of ground nutmeg
3/4 cup grated parmesan cheese

Melt butter in medium saucepan over moderate heat. Add shallots or green onion and sauté until soft--3-4 minutes. Be careful not to let them burn. Stir in heavy cream, light cream, salt and nutmeg and bring to a boil over high heat, stirring constantly. Reduce heat to medium low and simmer uncovered until sauce thickens--4-5 minutes. Stir in Parmesan until melted. Serve over cooked and drained fettuccine.
