DIRECTIONS:
1. In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
2. In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
3. Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

u cook like rice like u normally would...u need a wok. and then u put soy sauce and onions and eggs and other things that u want in it...and cook it in a wok..

first steam or boil the rice until it is the right texture, then throw it in a frying pan with whatever you want in it: veggies, meat etc., and brown it all up. Also, sometimes it's good to add a little soy sauce while it's cooking in the frying pan.
This is how I make it. I boil some rice first. Then I fry in a pan a couple of scrambled eggs and then cut them into stripes. I sautee' in oil then some ham cubes, chicken, peas, onions, shrimp etc. I add the boiled rice and the fried egg strips and add some soy sauce. Ready!

100g chicken fillet, shredded
1 tsp chopped garlic
1 tsp chopped ginger
2–3 tbsp oil
1 tsp sesame oil
Seasoning:
1 tbsp oyster sauce
1 tbsp light soya sauce
1/4 tsp salt or to taste
1/2 tsp sugar
A good dash of pepper
A good dash of ground black pepper
1/2 tsp chicken stock granules
Method
Heat 1 tablespoon oil in a wok and crack the eggs into the wok. Add a good dash of pepper and scramble until just cooked. Push aside. Add remaining oil and sesame oil. Add chicken, garlic and ginger and fry until chicken turns pale. Stir in mushrooms, French beans, carrot, Five-spiced bean curd and char choy. Fry well to combine.
Put in the rice and toss well to combine. Add seasoning to mix. Toss the rice briskly over high heat and drizzle in extra oil if necessary to glaze the rice. Keep stirring until the rice starts to “jump”. Combine all the ingredients together and fry until heated through. Dish out and serve immediately.
Pineapple Fried Rice
Ingredients
450g overnight cooked rice
4 tbsp oil
250g pineapple, diced
100g small prawns
100g chicken meat, diced
2 eggs, lightly beaten
Seasoning:
3 tbsp fish sauce (Nampla)
1 tsp pepper
1 tsp sugar
1 tsp chicken stock granules
5 bird chillies (cilipadi), chopped
Garnishing:
Chopped spring onions and coriander
Method
Heat wok with 2 tbsp oil and saute prawns and chicken meat until cooked. Add eggs and combine well. Mix in rice; add seasoning and blend well. Gradually drip in remaining oil.
Lastly, add pineapple and blend well. Add the chilli and chopped spring onions and coriander. Dish out and serve either in a pineapple boat or on individual serving plates.

2 tbsp frozen green peas

1 tbsp Premium oyster sauce
1 tbsp light soya sauce
1/4 tsp salt
1/8 tsp pepper
1/8 – 1/4 tsp sugar or to taste
1/2 tsp chicken stock granules
Garnishing
1 tbsp chopped spring onion and sliced red chilli
Method
Heat 2 tablespoons oil in a wok and fry beaten eggs until just cooked. Remove and set aside.
Reheat wok with 3–4 tablespoons oil till smoking hot, add garlic and fry until golden and fragrant. Add prawns, mushrooms and sausages.
Stir-fry for a minute, then add in rice and mix in seasoning and green peas. Stir briskly to mix the ingredients thoroughly. Add sesame oil to glaze the rice. Return the eggs to the wok and mix well to blend.
Dish out and garnish before serving.
