How long is too long for meat to marinade? I ask this because I'll leave chicken breast to marinade for a day or two in the refrigerator. It tastes good, but I still worry about bacteria, salmonella, or ???

So how long can I marinade before I have to throw the chicken out. How about beef (steaks)?

Ha ha, thanks for reminding me, I have steak marinating in the fridge that's been there a couple days but I'm too lazy to go cook it. I think (and what I'm hoping) is that as long as it stays under a certain temperature, a few days is probably ok, especially as long as its cooked well enough.
meat marinating requires only 2-3 hours, and as little as 30 minutes.
marinating too long will not make it taste better.
it can probably stay a day longer than unmarinated meat cos of the extra salt content of most marinade

most meat can be kept 3-5 days in the fridge

why not freeze the marinated meat if you have no time to cook it?
I'd say 24 hours maximum, other wise freeze it especially as the weather starts to get warmer. You can't always smell poison.
