First you have to start with the meat at room temperature. (If you don't it can make the meat tough and/or dry). I usually brown mine in a skillet first, then I put it in the oven covered for about 45 min. to 1 hour depending on how you like it and your oven. It needs to be about 180 degrees internally. Of course I hope you know that you have to let it rest after you take it out of the oven for about 20 minutes before you cut it. That way all the juices are re-absorbed, so your meat won't be dry. Slice it thinly. Brown the the slices in light olive oil and remove from skillet. Sautee one cup of chopped yellow onion in skillet until tender. Return pork slices to skillet with two cloves chopped garlic, 2 cups sliced potabello mushrooms and 1 1/2 cups Marsala cooking wine. simmer 1/2 hour.While stirring Add 1/4 cup heavy cream and gradually add flour to a gravy consistency. something I devised....Yum.
