Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Oh NOOOOOO....You'd better soak it at least an hour if you're planking fish. Otherwise in 5 minutes it's all dried out and on fire.

15-20 minutes is sufficient

We just bought a smoker last year & have found that longer is better. We normally soak cedar, apple or hickory at least 3 - 4 hours & keep some soaking the entire time in case we need more......Pork loin is fabulous with apple wood by the way!!

It depends upon the thickness of the plank.

If it is thin (3/8") then 4 hours is plenty.

If it is thick (7/8") then soak overnight.

I love cedar plank grilling. I bought some commercial planks (3/8") and then bought a 6' - 7/8" board and cut my own planks. Make sure that it is untreated red cedar.
