Tomato Soup

INGREDIENTS:
14 quarts ripe tomatoes, chopped
7 onions, chopped
2 stalks celery, chopped
3 tablespoons chopped fresh parsley
3 bay leaves
1/4 cup salt
3/8 cup white sugar
2 teaspoons seasoning salt
1 teaspoon ground black pepper
1 teaspoon garlic salt

DIRECTIONS:
Place tomatoes, onions, celery, parsley and bay leaves in a large pot and cook, covered, on low heat for 1 to 2 hours, until quite soft and fragrant.

Remove bay leaves and blend tomato mixture in batches in a food processor or blender, then run through a sieve and return juice to pot. Stir in salt, sugar, seasoning salt, pepper and garlic salt. Bring to a boil, then reduce heat and cook, uncovered, 1 to 2 hours, until thickened.



Cream of Tomato Soup with Pesto

INGREDIENTS:
1 (32 fluid ounce) container chicken broth
1 (14.5 ounce) can diced tomatoes with juice
1 (14.5 ounce) can diced tomatoes with garlic and onion
1 cup half-and-half cream
salt and pepper to taste
2 tablespoons basil pesto

DIRECTIONS:
Pour chicken broth into a large saucepan, and bring to a boil. Boil until reduced by about 1/3.

Pour in both cans of the tomatoes, and return to a simmer. Pour in the half-and-half, and turn heat to low. Simmer for 15 minutes.

Puree in batches in a blender, or use an immersion blender in the pan. Season with salt and pepper to taste. Ladle into bowls, and swirl in a spoonful of pesto before serving.

Tomato Soup I

1 tablespoon olive oil
1 onion, finely chopped
3 stalks of celery, finely chopped
1 carrot, shredded
4 tomatoes, chopped or 1 (14-ounce) can diced tomatoes
1 teaspoon dried basil leaves, crumbled
3 cups of vegetable or chicken stock
Salt and pepper to taste
Heat the oil in a large pot and saute the onion, celery, and carrots until vegetables are tender.
Add the tomatoes and basil. Simmer over low heat, stirring occasionally, until tomatoes are softened.
Transfer the mixture to a blender or food processor and carefully blend until smooth. (Caution! Hot liquids create steam which will blow the top off the blender! Be sure to securely hold blender lid down!)
Return pureed mixture to cooking pot and combine with the stock. Simmer, uncovered, until soup is reduced to the desired consistency. Season with salt and pepper to taste.
Makes 4 servings.
Just made some that sold out today. Cans of tomato soup combined with sweet basil, fresh garlic, parmesan cheese, and heavy whipping cream. Adjust to taste. Good luck!

14 sprigs parsley
8 tablespoons sugar
3 bay leaves
2 teaspoons pepper

WASH; cut up tomatoes.
Chop onions, celery, parsley, bay leaves.
Add to tomatoes; cook until celery is tender.
Put through sieve.
Rub flour and butter into smooth paste thinned with tomato juice.
Add to boiling soup; stir to prevent scorching.
Add salt, sugar and pepper.
For smoother consistency put through sieve again.
Fill clean jars to within one inch of top of jar.
Put on cap, screwing the band firmly tight.
Process in water bath 15 minutes.
