This is what I'm making for dinner tonight. Thought I'd share the recipe with you.
Stuffed Mexican Pizza Pie
1 pound ground beef
1 large onion, chopped
2 cans of diced tomatoes with green chiles (Rotel is one of the brands that is put out)
1 1/2 cups instant rice
2/3 cup water
2 cups shredded Mexican blend cheese
1 container (10 ounces) refrigerated pizza crust dough (such as Pillsbury)
Preheat oven to 425 degrees Fahrenheit. Spray a 13x9-inch baking pan with cooking spray; set aside.
Spray large nonstick skillet with nonstick cooking spray; heat over high heat until hot. Add beef and onion; cook and stir 5 minutes or until meat is no longer pink.
Add rice, tomatoes with chiles and water. Brink to a boil. Pour beef mixture into prepared baking pan. Sprinkle with 1 1/4 cups cheese and stir until blended. Pour mixture into baking pan.
Unroll pizza crust dough on work surface. Place dough in one even layer over mixture in baking pan. Cut 6 to 8 slits in dough with sharp knife. Bake 10 minutes or until crust is lightly browned. Sprinkle top of crust with remaining 3/4 cup cheese; continue baking 4 minutes or until cheese is melted and crust is deep golden brown.
Let stand 5 minutes before cutting. Makes 6 servings.

There is a dish I had when I lived in Canada Called Shepard's Pie. You first make smashed potato's (you can use instant potato also). Then fry ground beef then you add can sliced potato after the meat is fried. You can add any vegetables you like. Let Simmer for about 15 Min's. Add to a pan about 2 inch deep. Cover with potato like if it were a spread, bake for about 30Min's to an Hour, and / or just serve as is.

INGREDIENTS
6 green peppers1 tbsp worcestershire sauce
? lb lean ground beef1/4 c. finely chopped onion
1 tsp prepared mustard1 tbsp chopped pimiento
1 tsp salt1 (10 3/4oz) cn cream of tomato soup
1 (12oz) cn whole kernel corn
1.Cut a slice off the top of ea. pepper. Remove core, seeds, and white membrane.
2.In a sm. Bowl, combine beef, onion, pimiento, salt, and corn.
3.Spoon into peppers. Stand peppers up in crock.
4.Add worcestershire to soup and pour over peppers. Cover pot, cook on low 8-10 hrs.

INGREDIENTS:
? c. whole milk2 slices white bread
1 ? lbs ground beef2 eggs
1 sm onion, peeled1 ? tsp salt
? tsp pepper1 tsp dry mustard
1 (12oz) cn whole tomatoes

1.Place the milk and the bread in mixing bowl and let stand until the bread has absorbed all the milk. With two forks, break the bread into crumbs. Gently mix the ground beef into the crumbs until well mixed, but try not to over mix. Over mixing will cause the meatloaf to be tough.
2.Make a hollow in the middle of the mixture and break the eggs into it. Beat the eggs with a fork in the makeshift bowl, then grate the onion into the eggs.
3.Add salt, pepper and mustard. Mix gently into meat mixture. Shape into a round cake and place into slow cooker.
4.Drain the tomatoes, and place them over the meat. Cover and cook on low for 5-7 hrs. before serving, uncover the pot and turn pot to high heat to bubble away some of the excess moisture from sauce. Sauce should be thick not runny.
**A neat trick is to use those new crock pot bags in your crock pot before putting the meatloaf in, then when it’s done you can lift the meatloaf out by the bag.

1 cn (17oz) corn w/liquidgrated cheddar cheese, garnish
green onion, garnishfresh chopped cilantro, garnish
sliced black olives, garnish1 sm can chopped green chilis
UTENSILS:
Saute panKettle or soup pot
1.Saute celery and onion together in a little butter. Add ground beef and cook until browned (I use a potato masher to separate ground beef in pan while cooking). Drain any excess fat.
2.Combine celery, onion, beef, and remaining ingredients except cheese, green onion, black olive, and cilantro, in a kettle. Simmer 1-2 hrs. If more liquid is needed add more canned tomatoes or chicken broth
3.Ladle into bowls and top w grated cheese, cilantro, black olives, and green onions.

Tacos are my favorite. Also I really like Hamburger Helper cheeseburger macaroni, which is really bad for you but I don't care. My mom used to use brown gravy, leftover from pot roast, on browned hamburger. I also like hamburgers on rolls. Sloppy Joes- put the ground beef mixture between hamburger buns and enjoy! (or you can use plain bread)

Lasagna Casserole
Add 1 jar spaghetti sauce & 3/4 package mozzerella cheese to 1 lb. cooked ground beef. Mix in pasta (any shape works) and put the mixture into a casserole dish. Top with salt, pepper, and leftover mozzerella cheese. Bake for 20 minutes at 350 degrees.
Hamburger Pie
Add 1 can green beans & 1 can of tomato soup to 1 lb. ground beef. Put mixture into a casserole dish and top with mashed potatoes. Bake for 15 minutes at 325 degrees.
Wagon Wheel Cheeseburger Macaroni
Add 1 can tomato soup & 1 can cheddar cheese soup (campbells) to 1 lb ground beef. Mix in cooked wagon wheel shaped pasta.
Homemade Chili
Add 1 package chili seasoning, 1 can kidney beans, & 1/2 can tomato sauce to 1 lb ground beef. Simmer until sauce is thickened.
Hope these work for you. My family is probably the pickiest I've seen and they all love these recipies. Another easy thing you could do is just add some taco seasoning to 1 lb ground beef and that makes some very easy tacos that you could top with whatever you want. :)
