I like to grill chicken breasts (seasoned with simple salt and fresh ground pepper)then take off the grill and spoon salsa( a really good, chunky spicy kind)on top of the chicken. Then sprinkle with Mexican flavored shredded cheese. Place in pan and cook under broiler just until cheese is nice and bubbly. I serve this on or with Spanish rice and refried beans drizzled with queso blanco( I know they carry this in wal-mart stores)My family loves it and I've got some picky eaters

1 box of jiffy cornbread mix (do as the direction says and add 1/8 cup of more milk)
Brown up 1 or 2 lbs hamburger meat
1pkg taco mix or sloppy joes
1 cp chopped tomatoes or can diced tomatoes
1 pkg shredded cheese
(some shredded lettuce with the taco)
1/2 water
mix meat, season mix,water (plus what the package requires),add tomatotes. pour into a 8x9x2"deep bake pan.
mix cornbread as directed and add 1/8 or 1/4 cp of milk. Pour evenly over the meat mixture.( make sure the center does not have more than around the pan)
Bake 350...about 15 to 20 minutes til cornbread is pretty color and done.turn oven off and quickly do..
While hot put cheese on top evenly and put back into the oven to cool off. serves up to 6-8 ppl
with the taco u may want to put lettuce on top then the cheese. cool in the oven. Good luck!!

U can do a pizza this way too. instead of taco or sloppy joe mix.. use pizza sause plus all ur favorite topping and 1/2 cp water mix well.. then pour ur cornbread on top. after cooked then add ur cheese. cool off in the oven(makes the cheese melt wonderful on top)
Try making mini-pizzas. Take some English muffins, toast them, then add pizza sauce, cheese, and a topping. Broil in the oven for a couple minutes. Easy, and delicious. And cute too! WRAP UP SOME SHRIMP IN BACON
