Brown Sugar Meatloaf Recipe
. I use chili sauce or salsa instead of ketchup to give a nice contrast to the sweetness of the brown sugar.
1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 lbs lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine crumbs
6-8 servings

1. Preheat oven to 350 degrees.
2. Lightly grease a 5x9 inch loaf pan.
3. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
4. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
5. Place on top of the ketchup.
6. Bake in preheated oven for 1 hour or until juices are clear

Gently stir fry peppers and onions with garlic 'til they are softened. Add the mince and cook until there are no more pink juices. Meanwhile cook some pasta shapes til they are al dente. Mix a tin of Campbells condensed tomato soup through the meat mixture - don't mix any water into the soup. Layer the pasta and meat mixture in a casserole dish and top with grated cheese. Cook through in a medium hot oven for about 40 minutes. Delish! pasta bake:
brown the mince and fry an onion and some mushrooms with it and then mix in some dolmio pasta bake sauce, there are loads of flavours to choose from.
in a separate pan boil some pasta, when it is cooked drain it and stir it into the mince.
transfer to an oven proof dish and top with cheese, pop it under a grill until the cheese is browned...
trust me you can't beat this recipe it will fill you up for days :o) happy cooking.

What about 'spicy beef noodles'Heat 3tbsp(45ml) oil in a large saucepan, gently fry a 'large chopped onion' for bout 3mins until softened, add 3 cloves crushed garlic and 500g mince, fry until brown , breaking mince up as you go. Drain off fat. Stir in 1tbsp medium curry paste,1tbsp tom.puree,1tsp caster sugar ,2tbsp soy sauce, 300ml beef or chicken stock , finely sliced green pepper and finally juice and rind of one lemon. Simmer gently fo 20min or until pulpy.Serve with some dried thread egg noodles(cooked for 3mins in boiling water first).Easier than sounds honest and well yummy! For Almond Couscous: Cook almonds and reserved seasoning mixture in small saucepan over medium heat 4 to 5 minutes or until almonds are lightly browned, stirring frequently.
Remove from heat; add couscous, boiling water and salt, mixing well. Cover and let stand 5 minutes. Gently stir in tomato.

mince and tatties yummy Make up the mince as if you were making a cottage pie and use as a filling for pancakes. Tastes really good and it's economical! My kids used to love savoury pancakes when they were young!
