An old habit from the times of 'skillets' - cast-iron frying pans. Not necessary for modern pans, especially those coated with the likes of Teflon. My mum used to use a ball of newspaper to prime her pan before cooking.......

To keep the pan seasoned, and it cuts off the grease to a certain amount.I sprinkle salt in the pan BEFORE use as it makes my steak taste good and helps form a crisp layer - it is the opposite of most cooking wisdom but I do it this way and have good results.
Rinse a clean pan with water and tip off excess water
Place the pan on a HOT element to evaporate water and sprinkle with salt
then add oil and when smoking throw in your steak.
Let is sit a while before turning, obviously don't wait until it is burning, but let it form a crust.
After you turn it and form the other crust you may need to lower the heat and flip it a few more times until cooked as you like it
