Preferably without rice, peas & carrots!

Answers:
If you don't mind fish, there's a dish called Salsa Blanca I got from Spain. You'll need:

Fish - I like fish with white meat like cod
About 3-4 big tomatoes, thinly sliced
1-2 onions, thinly sliced
olive oil
sliced ginger - about the size of your thumb
salt and pepper to taste

You'll want to drizzle a little bit of olive oil on the bottom of the casserole.

Place a layer of tomatoes to cover the bottom of the pot. Sprinkle some salt and pepper.

Layer onions on top of the tomatoes.

Arrange the fish on top of the vegetables. Drizzle with olive oil. Add ginger. Season with salt and paper to taste.

Add another layer of onions and another layer of tomatoes.

Cover the casserole and cook at very low heat. How long will depend on how thick the fish is.

If you want to give a more sophisticated flavor, you could splash dry white wine.

I like this dish served with steamed rice I bought from the Chinese diner down the road ;-)

BUSY NIGHT CHICKEN

4 chicken breasts

If chicken breasts are frozen, defrost in microwave for 10 minutes.

Put chicken breasts (skin side up) in a baking dish. Sprinkle both sides with garlic salt. Bake at 400 degrees for 30 minutes or until skin is crisp and chicken is not longer pink.
