Answers: Exactly as you said!.!.!.!.I combine softened butter (1/2 stick) with 2 Tbsp!. brown sugar, 1 Tbsp!. cinnamin and a pinch of salt and pepper!. Serve a dab on baked sweets in the skins!.Www@FoodAQ@Com

Ingredients
a!.!. 6 sweet potatoes
b!.!. 1/4 cup butter
c!.!. 1 small onion, minced
d!.!. 1 tablespoon packed brown sugar
e!.!. 3/4 tablespoon orange zest
f!.!. 3/4 teaspoon salt
g!.!. 1/4 teaspoon ground cumin
h!.!. 1/4 teaspoon ground cinnamon
i!.!. 1/4 teaspoon ground black pepper
j!.!. 1/8 teaspoon ground allspice
k!.!. 1/4 cup sour cream
l!.!. 2 tablespoons chopped fresh cilantro
m!.!. 2 egg whites



Directions
1 Preheat oven to 400 degrees F (200 degrees C)!.

2 Place potatoes on baking sheet and bake until just softened, about 1 hour!. Allow to cool for 15 minutes!.

3 Slice off 1/2 inch lengthwise from tops of potatoes!. Scoop out pulp, leaving 1/4 inch thick shells!. Reserve 4 shells; discard remaining 2!. Mash pulp!.

4 In a small skillet, melt butter over medium heat!. Add onion; cook until softened, about 8 minutes!. Add brown sugar, zest, salt, cumin, cinnamon, pepper and allspice!. Cook until sugar melts, about 2-3 minutes!.

5 Combine onion mixture with mashed sweet potatoes!. Stir in sour cream and cilantro!.

6 In bowl with mixer on high speed, beat egg whites until soft peaks form!. Gently fold whites into sweet potato mixture!.

7 Spoon or pipe mixture back into shells!. Place on baking sheets; bake until filling is just set and tops begin to brown, about 15 to 20 minutes!.

Makes 4 servings




Twice-Baked Sweet Potatoes With Raisins And Pineapple

1 3/4 pounds unpeeled sweet potatoes -- (4 small)
1/2 cup golden raisins
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
8 ounces unsweetened crushed pineapple -- (1 can) drained
2 tablespoons chopped pecans

Place potatoes on a baking sheet!. Bake at 400F for 1 hour or until done!. Let cool 15 minutes!.

Cut each potato in half lengthwise; carefully scoop pulp into a bowl, leaving shells intact!. Mash pulp; stir in raisins, sugar, cinnamon, and pineapple!. Spoon into shells; sprinkle with pecans!.

Bake at 400F for 15 minutes or until thoroughly heated!.Www@FoodAQ@Com

If it's the one I use it is exactly butter, brown sugar and cinnamon!.

You can melt 4T butter whisk that with 4 T!. brown sugar and 1/4 teaspoon of cinnamon!. Add a pinch of salt!. (1/4 teas!. if you use unsalted butter)!.

Or make honey butter!. With butter at room temperature (soft not melted), whisk together butter, honey to taste, cinnamon to taste and a pinch of salt!. Pour into a butter mold or small dish and refrigerate until time to serve it!.Www@FoodAQ@Com
