One of my favorites is something I call Mexican Lasagna.
I use a 9 x 9 round cake pan, and soft-taco sized tortillas.
1. Start with one tortilla in the bottom of your pan.
2. Add 1/3 can of refried beans and spread it around the tortilla.
3. Sprinkle on grated cheese.
4. Repeat steps 1 - 3 until the whole can of beans has been used.
5. Pour on one small can of enchilada sauce (red or green are both good). I usually use a knife to pull the edge of the tortilla away from the side so that the sauce can get in underneath.
6. Bake until the whole thing is bubbly...cut into pie-shaped pieces to serve.
For step number 3, you can actually toss in whatever ingredients you have around the house...tomatoes, onion, ground beef are all good...I have actually used left over bacon with this one.
I like to cook this one recipe I got off a can or Ro-Tel.
cook your chicken with onions and bell peppers, when that is done add a can of ro-tel and a can of cream of chicken,let that cook. Use a regular 9x9 pan and tear corn tortillas into small pieces and layer bottom of pan with tortillas, pour chicken mixture over the layer of tortillas and add sprinkle cheese on top continue layering tortillas and mixture and cheese until you have none left (about 2/3 layers) bake in oven until cheese is well melted. When you eat it you can top it with sour cream guacamole whatever you like. This is a quick - easy - and delicious meal!!!
