marinate meat...cook it covered in a little bit of water first...let it evaporate...then add butter at the end. tender and well done!Yum!

Try using nucoa frying butter.....it stays moist while you are cooking the steak. It won't dissipate. It takes practice.
I like my steak cooked medium. I use my 10" cast iron fry pan and I cook 1 Black Angus Rib Eye for 4 minutes on one side, and 3 minutes on the other side.
It took a lot of nasty steaks for me to find what worked for me.

Keep temp. low and add little water and cover for steaming effect! poke holes in the meat with a fork to tenderize it
On medium high heat, sear both sides (to keep in juices), using a small amount of oil or butter. Reduce heat to low and cover. Turn as needed.
