Try looking at zuchini patty recipes. I had something similar many years ago while in Italy. Zuchini patties were fried and then served topped with a lightly seasoned tomato sauce, similar to a slightly spicy thick tomato soup. My guess is that they were made of finely grated zucchini, bread crumbs, eggs and a bit of garlic.
