I have some boneless chicken breasts. Any suggestions for a quick lunch that kids love?
Answers:
Slice them into long, thin strips, much like that of chicken fingers or chicken fries. Crush up about 6 Ritz or Club crackers for each chicken breast you use. Add an approximate equal amount of grated Parmesan cheese to the crackers and mix evenly. Rinse the chicken and shake off the excess water (don't pat dry) and dip it in the cracker/cheese mixture. Place the breaded chicken in a pan with hot oil (just a little more than needed to coat the bottom of the pan). Cook on a medium-high heat for 5-10 minutes on each side until done. My advice is to turn the chicken only once so the breading will stay intact. The combination of my stove and my pan requires an entire chicken breast to remain on each side for 10 minutes. You'll have to adjust accordingly.
Once the chicken is through, you can serve it with your children's favorite dipping sauce...like cheese or ranch. However, they're very good all by themselves!

dip in beaten eggs, then to seasoned flour, then to eggs again, then to coarse breadcrumbs, the deep fry them. YUm.. cut them up and throw them in a salad or just cook them up and cut them up and give them some bbq sauce.
chicken nuggets... cut them up, fry them in some vegetable oil and serve with ketchup or honey mustard! always a favorite!
My kids actually love grilled chicken (or done on the stove top if you don't want to grill)Slice it and serve with some green beans or carrots. Let them have a small amount of ketchup or ranch for dipping, but not much.

Try baked chicken fingers:
1) Mix 3 tbspn of mild curry paste and 1/2 cup mayonaise
2) Add chicken breast cut in strips and marinate for 5min-1h
3) Take strips out, roll them in panko bread crumbs
4) Place on a baking sheet and bake at 350F for 20 min

(1) cut chicken meat into cube ,marinate with corn starch,stir fry until cook then add freshly prepared smashed or thoroughly blended tomatoes until cook,add sugars to taste.
(2)Separate egg white and york,use only egg white to marinate the boneless thinly slide chicken for fast cooking then sprinkle smashed cream cracker(biscuit) to be use as bather over the marinated meat and deep fry until crispy and removed for serving also add salt for taste during the marination process. cook them and cut into small pieces. Add some bbq sauce. Put on a toasted english muffin along with some purple onion slices and mozzarella cheese and stick under broiler until cheese melts
