I have a great arabic dish that consist of lentils and rice, and onions. Its not really a casserole though. Its very simple....you cook the lentils, then use basmati rice, mix them together before cooking the rice. Brown onions until they are almost carmelized. Then you eat it with yogurt salad. Yogurt salad is plain yogurt, with cucumbers cut up really small. Add some garlic to that, and some mint, and viola...a great vegetarian dish, or better yet, a great dish for us poor folks!
