Looking at a recipe for cookies and it contains biocarbonate of soda. I know my mum doesn't use biocarbonate of soda, but what would she use instead?

bicarbonate of soda = sodium bicarbonate = bicarb = baking soda.

You are right, sometimes the cookie recipe calls for only baking powder.

There is no replacement, but you can omit it all together. The results (texture and volume wise) might differ though, as bicarb is a leavening agent.

Please note that some baking powder contain bicarbonate of soda, maybe thats what your mom uses.

Do you mean Sodium Bicarbonate??? That is more commonly known as Baking Soda, such as Arm & Hammer.
