We don't buy packaged rice because of the sodium content, so all we're left with is the plain white or yellow rice. Don't suggest cous cous or basmati type rice please - they're far too expensive. What I would like is a way to turn regular rice into things like rice pilaf! Some pizazz - something other than drudgery! Also, alternate suggestions for a whole grain starch (I know about potatoes) that are reasonably priced are welcome. Thanks!

You have raised two subjects - rice, and other grains. I will quickly deal with the second part now.
Bulgar, millet, red wheat and oats - yes oats! - are all wonderful grains to work with. If you do it right, you can make cereal dishes that are so good, they seem to be perfume on your tongue! I am not an expert in these dishes, but there are some superb vegetarian cookbooks you can read for free at Barnes & Noble or Borders - just take a pen and paper to write down the best stuff!
Now about a rice dish. Go getcha some of those terrific bell peppers - any color will do. Make your rice. Cut the peppers in half and scoop out the interior memberanes ands seeds. Pack your COOKED rice into the pepper halves. I usually add cracked pepper, tiny seed onions, pimientos (might be too pricey), a pat of butter on top and then sprinkle with paprika. White pepper is nice instead of black if you want a taste variation, but it is also pretty costly.
Wrap these in aluminum foil. Leave extra space for steam expansion. Put into an oven at 350 degrees F for about 20-30 minutes. Serve with the foil unopened - when you cut into the foil, the steam comes out, so don't put hands or face too close. But it SMELLS SO GOOOOOODDDDD. IT EATS RATHER WONDERFULLY, TOO!
This is a marvelous side dish with chicken or steak, and works wonderfully in contrast with candied carrots.

Emperor's Chicken Biryani Recipe
1/2 c vegetable oil
3 ea medium onions, chopped fine
2 ea cloves of garlic, chopped
1 oz fresh ginger, chopped
3/4 lb boneless chicken
2 ea brown cardamon pods
4 ea whole cloves
14 ea whole black peppercorns
2 ts dried coriander
1 ts cumin seeds
2 ts white poppy seeds
2 ts fresh lemon juice
1/2 ts garam marsala
1/4 ts cayenne pepper
1/2 ts salt
2 ts tomato paste
2 ea bay leaves
3/4 c plain yogurt
1 ea saffron rice recipe
1 ea biryani recipe
1 ea tomato slices
1 ea green pepper rings
1 ea fresh coriander
Heat oil in large, heavy frying pan and saute onions and garlic until lightly browned.
Add ginger, fry another minute or two, then transfer mixture to a large bowl.
Add chicken.
Grind together the cardamom, cloves, peppercorns, dried coriander, cumin and poppy seeds.
Blend with lemon juice, garam marsala, cayenne, salt, tomato paste, by leaves and yogurt.
Stir mixture into vegetable and chicken mixture, cover and refrigerate for several hours.
Using a large, heavy frying pan, cook mixture, covered, over low heat for 10 - 15 minutes, stirring often.
I believe Campbell's makes low sodim cream of mushroom and cream of chicken. Just mix in to the consistancy you're looking for and use your other spices such as onion or garlic powder. ground cumin also seems to change things up with minimal amounts. i will give you two receipes of rice, the regular one other than basmati as you say. no.1 is called home -made dosas, which go well with lentils i.e. dal preparation, or chutney, made from fresh coconut grond with coriander, mint leaves, garlic, ginger and green chillies, with salt and sugar to taste, with a dash of lime. o.k. now let's do the dosa. soak 1or2 cups of rice in water over-night, urad dal available in indian stores, 1cup soaked separately with some fenugrik seeds. in the morning, grind rice and dal separately, then mix and leave it in open for fermentation. after about 4 hours, heat a non-stick pan on stove, before that , add a litle salt and cumin seeds to the mixture, stir and on the heated pan, pour one large spoon of it, enogh to make one dosa at a time, spread it a little, and on semi-medium fire, allow to cook. when one side is cooked, you may tirn it with a flat wooden spoon. when done, dosa will easily come out. for chutney, make it prior to dosas, the base of grated coconuut, ginger, garlic, chillies, coriander, mint, salt , sugar to taste, grond together, sqeeze some lemon on top, that's your yummy chutney. serve hot dosas with chutney, tur dal cooked and flavoured with red chilli powder, and tossed with stir-fried onins, boiled baby potatoes, curry leaves,tomatoes,salt and a small ball of jaggery,mmmmm this indian dish is better than all your pilafs and stuff put together. another quick side dish of rice, now. wash a cup of rice and drain, keep aside, heat ghee in a deep pan, put washed rice and stir till golden browwnish, pour hot water and let the rice cook. heat creamy milk and add to the rice cooking on the stove, stir. add some saffron, cardmom powder, sugarto taste, serve hot by garnishing with dry fruits, like almonds, pistachios etc. if you like, you may add some dried coconut flakes separately fried, like the muslims do for their ksheer-khurma, depends on your taste, but this sweet dish is quick and easy to make. you can savour it with rotis also.Source(s):
