I have been thinking about making a cake and using rolled fondant on it because it looks so nice. However, I keep hearing that it tastes horrible, and if it's not the taste it's the texture. Is there any other kind of icing that has the smooth look of fondant, but has a decent taste? I'm going to make a red velvet cake. Is there a rolled fondant recipe that doesn't taste bad?

High quality fondant has the same flavor as a good butter cream but the cheaper has a horrible flavor either make your own or buy from a reputable cake shop. Since you are making red velvet cake and it is one of my favorites you should go with the traditional cream cheese frosting.

Fondant is usually used for decorating. Most don't eat it, you can though because it contains powdered sugar, gelatin, glucose, and glycerine. You can make your own fondant, but it's not as consistant as the one you buy. In our cakes class we had to make our own and the problem with that is sometimes it won't roll out as nice or it too hard/soft/dry etc. It's safer to just buy it, most in the industry does.
Fondant is the only way to have it look smooth unless you have really good decorating skills to make the frosting smooth.
