I made my 1st meringue pie today. No problem with the filling. But I just roll & can't fit my dough into the my pie-plate. I ended up putting one whole lump of dough onto the pie plate and squeezed it til it form it's shape.

yeah pretty pathetic i know. when I roll it, it kept breaking and I don't know how to lift it off and put it on the pie-plate.

Roll out it on a large cutting board or clean countertop. For me, the dough rolls out better if it's been slightly chilled in the fridge. As you roll, sprinkle flour as needed to keep the dough from sticking. Once it's rolled to the approximate size and thickness, move it to the pie plate. To do this without the dough splitting, just LOOSELY roll the dough around your rolling pin. Lift and then hold it above your pie plate and carefully unroll it onto the plate. Press down to mold it to the shape of the plate and trim the edges.

Hummmmmmm,sounds as if you might have used rolling pin on hubby's head and messed it up,before. ;))

It sounds like you are not flouring the surface of the table enough as well as adding some flour to your rolling pin.

Dust the table w/ ample amnts of flour as well as the rolling pin. In long and heavy rolls (approx 10 rolls), flip the dough over and dust the table again as well as the rolling pin. Once it fits the size of your pie pan, gently roll the dough onto the rolling pin and then unroll it into the pan.

*NOTE: Rolling and handling the dough too much can and will make it tough and crack.


I used wax paper to roll mine on. Put a little flour on the waxed paper and then a ball of dough. Check and make sure it's the right size compare the pan to the rolled out dough. When it fits your pan lift one side of the paper the dough will fold in half pick it up. Put the loose side down in the pan and peel the other off of the paper. Make sure you put it on the pan where you want it. If you want flakey crust do not push hard on the dough you are rolling out,take your time.
