My b/f has practically no cooking skills and insists he knows how, but my definition of dinner does not come from the freezer and ready in 5 minutes. Any ideas?

Are you really sure you want to do this? It depends on what he's like: I have banned mine from the kitchen, as even a simple cheese sandwich seems to require several knives, various wrappers and clingfilm, four or five plates, a cheese grater, two saucepans (to get at the grater) - all of which are left on the draining board and in the sink until someone (me) cleans it up. Then there are smears of butter on the cupboard doors, remnants of cheese on the floor...

Cooking classes. Stores like Williams/Sonoma and Sur la Table offer one day cooking classes, where they teach easy, tasty items. Both of you should go, and then practice at home.
What you should do is take away all the frozen food, all the stuff in a box, and give him a cook book, with a bunch of stuff from the store to make good meals, and tell him your on strike. Trust me, if he has a stomach, he will learn to cook something.
Buy a heavy duty fire estinguisher and leave the house immediately, if not sooner.
Make it fun for both of you. Cook together. Give him a few tasks to do - like chopping the veggies for the salad, or putting the side dishes together. Just be in the kitchen together and have fun! If you're really serious about it, try taking a beginners cooking class at a local grocery store or school. If you do it together, you should have fun and learn as well!

Umm, I'd just make sure they're actually interested first otherwise it'll be useless. Start out simple with quick 5-minute meals and then build you're way up. Make it creative and fun so that you both enjoy it and that its not life threatening serious if he doesnt chop his carrots the right way.
Make him get in the kitchen with you and turn cooking into a couples event. Sort of like trying to teach kids...turn it into a game.
why not cook together, if you know how to cook show him what you know.

Watch The Food Network and your local PBS station should have cooking shows. They have easy recipes.
Let him learn to cook the things he enjoys eating most first. It's a good way to start.

Just remember that if he doesnt learn to like doing it he will never be good at it.
Make him a dish that he absolutely loves and can't resist. Then get him addicted to it and then refuse to cook it for him. Tell him you'll teach him how to make it so he can make it himself.
