Here is my quick pie recipe:

I buy a pie shell (whole grain, tastes better, I feel)

I fill it with warm vanilla pudding and set it in the refrigerator.

Or, the filling could be vanilla pudding and cooked apple slices, or fresh strawberries,

or lemon cream from a package,

or chocolate pudding.

It is quick and my folks love it. May be you want to give it a try?

My best pie recipies come from The King Arthur Baker's Companion. The book has great pies in it, and you can also check out King Arthur at their website.
I would start with a recipe or try google.com
PIE SHELL

Ingredients:
1 cup flour
1/2 teaspoon salt
1/3 cup shortening
2-3 tablespoons ice water

Methods:
Combine flour and salt. Cut shortening into dry ingredients until mixture resembles corn meal. Add ice water one tablespoon at a time. Stir with fork. Form into a ball. Place on lightly floured surface and roll from center to edge until 1/8-inch thick. Makes one-9-inch pie shell.


PEACH PIE

Ingredients:
1 Baked Pie Shell

Main ingredients:
7 Peaches (peeled, sliced)
1/4 cup sugar
2 tablespoons cornstarch
2 tablespoons margarine

Methods:
Place all main ingredients in pan and cook on stove top until thick and clear. Cool. Place in pie shell. Refrigerate.
