Or are you just looking for another alternative because you can't eat beans?
what about zucchini? Tomatoes are good, also corn, carrots, pretty much any vegetable.

If you want a rice subsitute, lentils or coucous might be a good option.

Gumbo okra & tomato mabe with sausage.
Stir Fry veggies (maybe meat)
Milk, butter & sugar
