Peppy Beef Enchiladas
Ingredients
(4 servings)
3/4 lb Lean ground beef
3/4 c Picante sauce
1/2 ts Cumin OR
1 ts Chili powder
8 6-inch flour tortillas
1/2 c Picante sauce
1/2 c Shredded cheddar cheese
Instructions
Contributed to the echo by: Pat Knox Peppy Beef Enchiladas In a skillet cook ground beef till browned. Drain well. Return to skillet. Stir in 3/4 cup picante sauce and cumin or chili powder. Cook 1 or 2 minutes more. If necessary, warm tortillas in a 350 degree oven for 5 minutes to soften.
Spoon beef mixture near one edge of each tortilla and roll up jelly-roll style. Spray 13x9x2 pan with nonstick cooking spray and place tortillas in it, tucking ends in, if necessary. Spoon the 1/2 cup picante sauce over tortillas evenly and top with cheese. Bake in 350° degree oven 15 minutes or till cheese is melted and tortillas are heated through.
Serves 4.
Cheese Enchiladas
Sauce:
1/2 cup Chili Powder
3 cups un-salted Beef Stock
2 slices uncooked bacon, chopped
1 lb. Ground Meat
1 Onion, finely chopped
3 cloves Garlic, minced
1 tsp. Ground Cumin
1/2 tsp. Ground Oregano
1. In a blender, blend the chili powder with the beef stock until well blended.
2. In a medium sauté pan over medium high heat, cook bacon until crisp. Render the fat and add meat, onion and garlic. Cook until meat is brown.
3. Strain off any excess fat.
4. Add cumin, oregano and chili powder mixture to the beef stock. Cook for 30 minutes, by reducing one third. Keep warm.
Enchiladas:
1 1/2 lb. Grated Cheddar Cheese
1/2 large Onion, chopped
1/4 cup Canola Oil
12 Corn Tortillas
1 Tomato, chopped
2 Jalapeno, Seeded, and ribs removed, diced
2 tbsp. chopped Fresh Cilantro
1. In a mixing bowl, combine the cheddar cheese and onions
2. In a medium size sauté pan, heat the canola oil until warm.
3. Dip the tortillas into the warm oil and then into the sauce mixture. Place on a cutting board and evenly fill with the cheese mixture. Roll up and place in a baking dish. Top with sauce and bake in a preheated 350° oven until cheese is melted and everything is hot and bubbly.
4. Top with the chopped tomatoes, jalapeno and cilantro.
Chicken Enchiladas
Ingredients
(4 servings)
3 ea Chicken breast halves
16 oz Can tomatoes,chopped
10 oz Can cream of chicken soup
4 oz Can chopped green chilies
1 c Chopped onion or onion salt
2 c Shredded cheddar cheese
1 ts Ground cumin
1/2 ts Garlic powder
12 ea Corn tortillas

Cover chicken with water and simmer for 30 minutes. Cool, bone,and cut into strips,set aside. Mix tomatoes, soup, chilies, cumin, and garlic powder. Dip tortillas into broth left from boiling chicken, place one on a plate,add 2 Tb. of mixture and 1 Tb. of cheese. Roll up and place seam side down in baking pan. After all are filled and rolled, Pour remaining sauce evenly over enchiladas and sprinkle with remaining cheese. Bake at 350 until cheese is melted(about 20 minutes).

Mexican enchiladas vary according to the region. In northern Mexico an enchilada would a corn tortilla dipped into a mixture of what is commonly known as chile colorado, red chile, (its not hot at all, just used for the color) you can get them at stores featuring Mexican groceries, those chiles you need to soak in hot water untl they rehydrate, they you grind them in a blender after taking out all the seeds and cutting off the stem. The remaining mixture is used to dip the tortillas in and then cooking them briefly in oil. You can either fill them with fresh white cheese and diced raw onion, or shredded chicken strips, then rolled tightly and placed in a baking dish. Continue doing that until the dish is full. Then you can top it with any sauce you like, green or red, cover with shredded cheese and bake for a fifteen minutes, they taste pretty good, or use plain corn tortillas briefly cooked in hot oil and do pretty much the same thing, you can also pour cream over them in addition to the sauce, or mole, a thick paste made from several seeds and spices. The most commonly known brand is Do?a María, sold in Mexican Groceries. The so called Swiss Enchiladas just include green salsa and cheese topping. These are actual Mexican Enchilada recipes, not the commercial versions sold in many places and passed off as enchiladas. Hope you enjoy them.
