Many baked recipes can be exchanged w/ applesauce to replace oil or butter.
Rather than artificial sweeteners, look into using Stevia. It is all natural, is 100 times sweeter than sugar and is sugar free. It also can be used in baking and many dishes. It is available in most healthfood stores as a powder or a liquid with a dropper. We use it to sweeten our tea and it is sweet. The nice thing is that it is natural, and has been thru the test of time. It's been around forever and comes from a plant.
Also, in regards to butter, although it is high in fat, it is a whole food and is a natural product. Some baked goods just won't turn out as nice without butter. I prefer to use butter, but then "try" to choose to simply consume it in moderation.
There are also plenty of other healthy or healthier fat choices out there, like coconut oil, flax seed oil, olive oil, etc.
Also, many recipes can be made and sometimes the fat can be reduced without hurting the outcome of the recipe too much. Also, you can try using half butter, half applesauce, to reduce the fat content. I know applesauce can be used in place of oil/butter in a cake and it will come out very nice. With other dishes you may need to experiment some.

not sure on butter, but buttermilk, use 1 cup skim milk and 1 TBSP lemon juice..obviously scale down if needed
what the heck are you talking about? do you realize how much worse artificial sweeteners are than just regular sugar? sugar is all natural and you NEED IT TO LIVE. artificial sweeteners break down into FORMALDEHYDE in your body. do you know what formaldehyde is?
also, if you're considering margarine as an alternative to butter, keep in mind that margarine is hydrogenated in order for it to be soft at room temperature. this means it's saturated, and is much harder to break down in your body, thus making it much easier to store (ie in your arteries or thighs).
