Lumpia is the word for spring roll in the Philippines and Indonesia. It is a popular Filipino food, and though the process of making one has been introduced by the Chinese as early as the 16th century, it has grown increasingly Filipino over the years, in taste and in style of preparation. The term lumpia derives from lunpia (Traditional Chinese: 潤餅; Pinyin: rùnbǐng; POJ: jūn-piá?, lūn-piá?) in the Hokkien dialect of Chinese. Spelled as loempia, it has also become the generic name for spring roll in Dutch.

Indonesian Spring Rolls (Meloncat berguling)
Yield: 1 Servings

Ingredients
10 water chestnuts
1 sm can pineapple
1 white wine
1 bn scallions; chopped
10 garlic; minced
2 c bean sprouts
1 c mushrooms; diced
1 salt and pepper
20 won ton wrappers
2 eggbeaters

In a food processor, put chestnuts and pulse. Put in bowl. Process pineapple and add to chestnuts. Saute scallions, garlic, bean sprouts, and mushrooms in wine. Add to chestnut/pineapple mixture and mix. Fill wrappers with one of the points facing you. Fold point to center, cover with left then right point and roll. Brush with eggbeaters and bake at 400~ for 15 minutes.
