I say canola is the the healthiest but I have heard also that cocoanut is and also macadamia nut oil.

it is not the oil that is unhealthy it is how we fry, people tend to cook in oil that is too cold, cook with very hot oil and do not over load the fryer, each time you put food in the temperature of the oil drops. Use peanut oil it has a very high smoke rate meaning you can make it very hot, therefore the food will be in the oil for a shorter time and absorb less oil and saturated fats
coconut & corn oil
you should use an unsaturated oil with a high smoke point. Olive is a good oil but it burns at too low a temp. That is not to say that you cant use it, but I think that peanut oil is the best.

Also deep fried food absorbs very little oil.
Peanut oil is the best for texture and cripiness. However, it's probably the worst for you health-wise. No oil is really good for you in excess, and most fried foods absorb too much oil to make them healthy. But if I had to pick something, canola would probably be it. Olive oil is really better, but I've heard it's to hard to deep fry with(it burns quickly) so I've never tried it.

i use canola, it's light & healthy for all stir frys & mild deep frys.
corn oil is good & strong oil for deep frying substitute vs. shortening/lard tt restaurants use for heavy deep frying
or peanut oil for flavoring.

break down the least at high temperatures. It has to be extra LIGHT, not extra virgin or regular olive oil. Neither of these impart a taste to the food.

Deep fried junk food is still unhealthy, even when fried in the healthiest oil. If you are looking for the best health advantage, try not eating corn dogs and pizza rolls.
