So there ya go, the most common staple ingredient in rural African's is Putu (maize) and Maas. Its not that healthy though. The majoirity of them are extremely overweight despite the long distances and amounts of walking they do! Another commom food they like to eat is Sheep and cow brains, as well as Hamster Steaks. Woah does that stink!
Anyway, hope I could shed a little light on the eating habits of the people of my country!

Im South African! And would definitley agree with putu as its affordable for everyone and contains alot of nutrients!
Yeah ! proudly South African ! I used to eat putu and beans with the africans (black labourers ) on the farm - hands only, and samp and beans. You make a delicious ball of it in your hands and just chow it ...wow !
Your question does not have enough information in it for a real answer. "Africa" is a continent, not a country. There are 54 different countries in Africa, with almost as many different "staple" ingredients in their diets.
For example, millet & maize are staples in South Africa, and in Tanzania; Injera is a staple in Ethipia and Eritrea;
bread and boiled fava beans (fuul) are staples in Egypt; Rice is the staple in Madagascar, and so on and so on...
If you need one food to describe as an African staple, Millet or Maize would probably be the best choice...

I've met some wonderful friends from West Africa and in talking to them casava yam and rice are two staples they mentioned. The yam is pounded into a paste like form and called foo foo. the rice is used many ways with their wonderful variety of spices. My friends come from Ghana and Nigeria. I love cooking and enjoy sharing with them.
