Boiled Crawfish
Ingredients :
3 gal water
1/2 cup salt
1 pkt seafood boil
1 tbl creole seasoning
1 tbl cayenne pepper
1 tsp granulated garlic
1 tsp white pepper
1 tsp black pepper
6 lb live crawfish
Method :
Directions:
In a large pot, place the water, salt, seafood boil, Creole seasoning, cayenne, granulated garlic and white and black pepper. Stir and bring to a rolling boil. Pour in live crawfish. Boil for 10 minutes. Turn off heat and allow crawfish to soak up spices for another 15 minutes. Strain out crawfish. If you're cooking more of them, put them in an ice chest and sprinkle Creole seasoning over each new batch. Change the water and seasonings after two boils.
Many Louisianans also boil vegetables in the crawfish water. Tradition calls for new potatoes, whole onions and ears of corn. Cook as much as you want by putting them into the water before the last batch of crawfish. Then pour in the crawdaddies and let the veggies soak up the flavor.

1)in a med-high heated pan, saute ground garlic, onions. crush red chili peppers, dash salt, pepper, cayenne peppers, cumin, paprika, cilantro flakes. turn up the heat high again, dump in the crawfish, stir fry bout 5 min.,set aside ( i like less water overcooking the crawfish, hence reducing the flavors of it / methods varies according to ur liking - if u do not prefer stir frying them, u could just dump them into hot boiling water by now )
2)in a hot boiling water pot, dump in crawfish in, dash in some cajun seasoning, lemon juice (if u like), turn down to low heat, cook for another 30 min/+- ( to avoild rubbery tough texture feel ) until all sauted ingredients sits in crawfish nicely.
for frozen cooked ones :
1) just steam them until it's hot, prolly 15 min./ dump them into boiling water, cook on low heat all over again.
serve nicely w/ chili w/garlic sc/ tobasco sc/ lemon butter/ any of ur fav sc. btw, love louisiana cajun crawfish :)
