Answers: Appetizer: Pork Pinchos (Pincho is a spanish word for finger food, doesn't need a plate!. It is basically a kebob!. The recipes are below my suggestions)!.
Main Dish: Burgers
Sides: Potato Salad
Desert: Fruit Salad or Apple Pie!
Cocktail: Strawberry Fresco which is Smirnoff Citrus Vodka, fresh strawberries and lemonade mixed together served over top ice!.
Or you can do my other favorite, Venetian Sunset which includes Martini & Rossi Asti with pineapple and cherry juices!.
Pork Pincho Recipe
6 cloves garlic, peeled
1 Tbsp!. kosher salt
1 Tbsp!. hot smoked Spanish paprika ( found in the hispanic section in the store)
2 tsp!.ground coriander
2 tsp!. ground cumin
2 tsp!. Ras al Hanout (recipe for this underneath)
2 Tbsp!. olive oil
1 1/2 Tbsp!. sherry or white wine vinegar
Freshly ground black pepper
1 lb!. boneless pork shoulder
1!. Smash the garlic cloves; add the salt to garlic!. With the flat side of a large knife, mash and smear the mixture into a coarse paste!. In a medium bowl, mix garlic paste, paprika, coriander, cumin, and Ras al Hanout!. Whisk in oil, vinegar, and black pepper!.
2!. Trim excess fat from the pork; cut pork into 1-inch cubes!. Add pork to the spice mixture, tossing until all pieces are coated!. Cover; chill for at least 6 hours or overnight!.
3!. On each of the 6-inch skewers*, thread three or four pieces of pork!. Lightly brush the pork with additional oil!. For a charcoal grill, grill skewers on the rack of an uncovered grill directly over medium coals about 10 minutes or until the meat chars but is still moist, turning once halfway through grilling!.
( For a gas grill, preheat grill!. Reduce heat to medium!. Place skewers on grill rack over heat!. Cover; grill as above!.) Serve lemon wedges!. Makes 16 servings
HOW TO MAKE THE RAS AL HANOUT: In a small bowl, stir together 4 teaspoons five spice powder, 1 tablespoon ground cardamon, 1 tablespoon ground ginger, 1 1/2 teaspoons ground nutmeg, 1 1/2 teaspoons ground turmeric, and 1 1/2 teaspoons cayenne pepper

1-1/2 pound ground beef
4 slices sweet onion
vegetable oil
8 slices American Cheese
4 crusty rolls, split and toasted
4 romaine lettuce leaves
4 slices tomato
Lightly shape ground beef into four 3/4"-thick patties!. Lightly brush onion with oil!. Place patties and onion on grill over medium, ash-covered coals!. Grill, uncovered, 13 to 15 minutes or until centers of patties are no longer pink and onions are tender, turning occasionally (you could also broil or pan broil the burgers)!. Season burgers with salt and pepper if desired, after turning!.
Approximately 1 minute before burgers are done, top each with 2 cheese slices!.
Meanwhile spread sauce on top half of each roll!. Line bottoms of rolls with lettuce and tomato; top with cheeseburger and onion!. Close sandwiches and serve!.

salt and pepper, to taste
2 tablespoons fresh parsley

Scrub potatoes, removing eyes and discarding any green ones!. Add 1 teaspoon salt to a medium saucepan of boiling water; gently lower potatoes into water and cook, with skins on until fork tender!. Grilled steak fingers that have been marinated in your favorite marinade!. This is easier to eat for the girls so you don't struggle with the knife and fork with a nice dress on,,,,you know what I mean!.!.
Definitely have a green, tossed veggie medley with in season chopped veggies!.!.!.!.cucumbers,,,,peppers,,,,,you might want to pop any hard veggie in the micro for just a second to soften them a little!. I love brocolli but I hate trying to eat it in hunks in a salad unless it has been softened a bit!.!.!.!.do the same with carrots or use baby ones!.!.!.!.some cherry tomatoes,,,and a dressing that most like,,,like Ranch!. Or, it is amazing how great Mayo with a dash of your fav mustard,,dash of lemon juice,,and maybe a bit of garlic!.!.!.!.!.can taste,,,if you need to thin it,,use olive oil!.!.!.
You other side dish could be Cauliflower with white cream sauce!.!.!.!.this goes good with steak and is a change from the constant potatoes!.
Have dessert be a fruit in season!.!.!.or at least good supermarket fresh fruit!.!.!.!.I don't think you can beat Strawberry Shortcake this time of year and it is so easy to make!.!.!.Buy the cake or make it,,,homemade biscuits make a nice change!.!.!.!.Crush you strawberries sugar and maybe a dash of your favorite liquor!.!.!.pile on top of your biscuit,,,add a mound of whipped cream!.!.add a touch of vanilla to the cream!.

Note: all of this is done in the same pan!!! take about 1 pound to a pound and a half size pork loin - sear on both sides 3-4 minutes on high, then roast in oven in same pan at 375* or internal temp of 165* [[about 20 minutes]], then to make the sauce - take the pork out and let it rest!.!.!. add 1/4 cup cider vinegar to the empty pan to deglaze [[dont wash it - leave it the way it was when you took the roast out]] along with 2 tbsp dijon mustard, 2 cups apple cider, all while wisking or mixing!.!.!. let it reduce on high by 3/4!.!.!. turn off heat!.!.!. add 2 tbsp cold butter and whisk it in and it thickens and makes a nice sauce!.!.!. slice the pork roast at an angle and top with sauce!.!.!. it looks soooo gorgeous and it only takes like 30 minutes to make!!
for sides, maybe mixed vegetable or corn, and some mashed potatoes!.!.!.
desert- simple strawberries with sugar sprinkled on top
cocktail-apricot cooler
1/2 tsp powdered sugar
2 oz carbonated water
2 oz apricot brandy
fill carbonated water or ginger ale
cracked ice
orange or lemon peel spiral
Into 12 ounce glass put powdered sugar and 2 ounces carbonated water!. Stir!. Fill glass with cracked ice and add apricot brandy!. Fill with carbonated water or ginger ale!. Insert spiral of orange or lemon peel (or both) and dangle end over rim of glass!. (Makes one 12 ounce serving!.)
