dry yeast you need to use water @ 105*F
That's about 10*F above body temp!. take 1/3 cup of the 105*F water add 1/2 tea spoon sugar and 1 Table spoon flour sprinkle the yeast on the water when the yeast softens add sugar and flour whisk to combine!. Do this the very first thing when you start your dough!. place in a warm draft free place!.
Start measuring the other ingredients into the mixing bowl by the time you are ready for the liquid to be added the yeast mixture
should be bubbly or foamy if not wait until it is and also the remaining water should have cooled down by this time!. If you are still uncomfortable with working with yeast try instant yeast it mixes into the dry ingredients
And there is a new yeast made by Freshman
out now that you only need to rest the dough 15 minutes instead of letting the dough double in bulk!. I bought a few pkgs!.
but haven't tried it out yet!. It is in a pink pkg!.
along side the other yeast!. Don't let the working with yeast be uncomfortable just remember the tempiture to actavate the yeast needs to be 105*F Two or three degrees higher is ok!. the dough should be 80*F to 84*F and never let the dough to become chilled!. Yeast can be a pain without a thermometer!. I've tried without one and killed it, LOL!!!
You need the temp around 110* I'll give you a star cuz I'd like to find out myself without using a thermometer!.

And no you don't need a machine, bit more labour intensive to knead by hand, but hey you get a free workout that way!.

Once the dough is balled up, place the ball on a floured board and knead for about a minute!. This builds the gluten which helps the dough to rise and become fluffy when cooked!. Place the dough in a plastic grocery bag or a covered bowl and store in a warm, dry area to rise!.
After about 45 minutes the dough should have about doubled in size!. Show it who's the boss and punch it down!. That's right, give it a good smack so it deflates!. Let it rise for another hour to an hour and a half!. The dough is now ready to be rolled out!. You can punch the dough down one more time if you want and wait another hour or two before rolling out!. This is the recipe I ALWAYS use!. It's easy, cheap, and my whole family loves it, including the kids!! It makes a Large pizza!. You could probably 1/2 the recipe though, if you want a smaller pizza!.
