Whole wheat muffins stick to paper cups!? I made whole wheat cranberry muffins!. They stick to paper cups crazy!. Why is that!?
Is it because!.!.!.
A) I use 1 cup whole wheat flour and 1 cup all purpose flour!. Is it the whole wheat flour making it sticky!?
B) Is it because I use applesauce to replace oil or butter!?
C) Is it because cranberries make the muffins stick to the bottom!?
D) Is it the paper cups!? I use Reynold's white paper cups, the most common one you get from the supermarket!.
I use paper cups for cupcakes (store bought cake mix like Betty Crocker or Duncan)!. Cupcakes don't stick to paper cups!. And I use applesauce instead of butter or oil as well!. So it can't be the applesauce, right!? Can whole wheat flour make it stick!?Www@FoodAQ@Com
Answers: sometimes depeneding on the moisture of your batter the cupcakes will pretty much be glued onto the paper cups leaving you with 1/3 of the cupcake you started with >!.<
the way we deal with this at our catering service is to spray the inside of the paper cups with PAM or any other type cooking spray!. we also spray the actual pan before we add the paper cups to deal with any burned batter, although pan sprayed oil makes for an unfun cleanup after the cupcakes are cooked!. I suggest using actual margarine or crisco and rubbing it on the pan with your fingers!.
the flour shouldnt be affecting the battter at all if you mixed the batter well
it also sounds like your cranberrys are floating to the bottom, a nice way to fix this is to fill your cupcakes up 1/4 of the way, cook for aprox 1 min, then add the rest ontop, it will cook evenly believe it or not and if you are using heavy berrys this makes for a neat design in the cupcake when you bite into it!
hope this helps!Www@FoodAQ@Com
Its because there's no fat or oil in the recipe!. My suggestions are:
Don't use cups and spray the pan directly with cooking spray or
Try the aluminum cups with cooking sprayWww@FoodAQ@Com
Spray your pan w/ Pam!. Put in paper liners!. Then spray your paper liners w/ Pam!. No sticking!. And a bit of oil in the batter wouldn't hurt, either!.Www@FoodAQ@Com
