Why are my hamburgers falling apart!?!?!? In my burgers I put 2 punds of burger, 1 large onion chopped, 1 pckg bacon, 1 cup bbq sauce, 1 cup breadcrumbs, cheese, hot sauce, 1 egg, and then some dried spices!. Answers: Wow, they sound fantastic but I think you have alot of ingredients in your burger mix to keep them together, you can easily fix this by adding another egg and see if this is firm, and then add some more breadcrumbs!. You're teadering on a meatloaf here, but it's OK!.!.!.!.!.!.!.!.!.!.!.!.!.!.your liquid content is a little high with the BBQ and hot sauce so the breadcrumbs will address this issue, the added egg will also work with the breadcrumbs to hold all of those chopped up additions together!. Make sure your onion is diced finely!. If it is in bigger pieces, that could contribute to the burgers falling apart!. How big are the pieces of cheese in there also!. Use grated cheese if you are not already!. also, the greasy bacon in the mix might be contributing to the falling apart!. Try putting the finished bacon on the top of the already cooked meatloaf patties!.Www@FoodAQ@Com
Your wet ingredients are making your burger-meat too slippery - and not able to have cohesion!.
Either cut down on some of the wet ingredients, or add more dry (more breadcrumbs)!. also, make sure that your onions are chopped REALLY small!. As a last resort, add the cheese at the end of the grilling/cooking, on top, like a cheeseburger, instead of in the meat!. It just makes the meat too moist to hold together!.Www@FoodAQ@Com
You are making meatloaf not hamburgs, who in God's name ever gave you such an atrocious recipe!. Any TRUE hamburg Lover / Purist will tell you the hamburg should be made with a decent ground chuck or ground sirloin approximately 80% lean, some suggest adding a tablespoon of cold water in order to keep the burger moist!. Do not over handle the burger, do not squash it with your spatula and do not overcook it!.Www@FoodAQ@Com

if so: soak your breadcrumbs in water, before you put them in, they are going to have a glue-like consistency and hep you keep it together!. also chop you onion as small as possible, large onion chunks often make iy fall apart!.Www@FoodAQ@Com
It's because what your describing really is a meatloaf!. That's way too much for burger patties!. Cut back on some of the ingredients!. Maybe try just the meat, onion, spices and breadcrumbs!. are they falling apart before or during cooking!? if it is during you are trying to flip them too soon!. you have to let the meat cook before you turn the burger over!. i would say depending on thickness, 5 minutes over medium high grill heat!.Www@FoodAQ@Com
