Not only sea bass, but Monk fish as well, they are just as expensive as salmon, while Tilapia and haddock are very cheap do they have more flavor, what does sea bass or monk fish taste like.

Think about the fishermen out on the high seas. Their job is the most deadly in the world. With diesel fuel well above $4.00 (US ) , the lack of fish and shellfish, and government regulations, it's almost impossible to make a living.
Monk fish tastes a bit like scallops, and sea bass tastes a bit like haddock or cod but a bit stronger. Tilapia here in New England is cheaper because it is farm raised freshwater fish, while our haddock is still as expensive as bass, salmon, and cod. It's really sad that we live in the biggest fishing port in the world (money wise) and we're still paying $9.00 to $10.00 a lb.!
Supply and Demand.
As for flavor? I have no idea. Never had Sea Bass or Monkfish. I've had Lake Bass though and it kinda reminds me of Flounder.
the same thing is happening all over the world , fish are getting scarce, and yet we are all consuming more and more of it sea bass and monk fish are better tasting fish then tilapia which is a farmed species, and haddock which is imported from south africa and there's still a healthy fish population of.
Tilapia is very cheap cuz its a hardy fish that eats anything n grows very fast. My husband won't eat it cuz he thinks its not 'clean'. However in many parts of 3rd world countries, fish like tilapia is the cheapest n easiest source of protein available.
