Cowboy Stew
1/4 stick margarine or butter
1 onion, chopped
1 lb. lean ground beef
1 (15 1/4-oz.) can whole-kernel corn, drained
1 qt. tomato juice
2 C. cubed potatoes, cooked and drained
1 (15-oz.) can chili with beans
In a skillet, sauté onion in margarine or butter until tender.
Add the ground beef and cook until meat is cooked well and no longer pink.
Add the corn, tomato juice, cooked potatoes and chili. Simmer for 15 minutes and serve with a good green salad.
Serves 8.
Cowboy Stew
1 can chili beans
1 can pork & beans
1 can cream style corn
2 (8 oz.) can tomato sauce
1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
Brown ground beef, onion, and pepper together. Drain well. Put all ingredients into crock pot; cover and cook on low 7 to 12 hours.
Serves 4.

1 12 oz. can corn

Brown ground beef, add onion, celery, green onion, chili peppers and sauté' until tender. Add all other ingredients. Increase heat to boiling point stirring frequently. Reduce heat cover and simmer for 30 minutes. Salt and pepper to taste. I like to add Creole or Texas steak seasoning. Serve over cooked rice with hot rolls or garlic bread.
Need a lower fat version of this recipe? Follow these tips to reduce the fat:
After browning the meat remove the meat from the pot and place in a fine meshed colander or strainer and rinse thoroughly with hot water then return to the pot. You could also substitute the beef with a low fat ground turkey.
