There's four main types of fondue - cheese, chocolate, oil and broth. You cannot use low fat cheese in fondue, it doesn't melt properly, and low fat chocolate fondue... why bother?

The traditional method for a beef/poultry/fish fondue is to boil them in oil on their little sticks - not low cal or low fat, of course. But there is a Japanese dish called Sukiyaki that has the same method, only using broth instead of oil. Heat the broth (any kind) in the fondue pot and provide lots of flavorful tidbits to cook - shrimp, chicken pieces, beef, veggies, firm-fleshed fish like haddock or salmon all cut into bite sized pieces. Everyone dips their spear in the pot and lets it simmer until their bite is done. At the end, you share out the broth in the pot and drink it like soup. THis is the only way I can think of to make low fat "Fondue."
