Toffee Crunch Cookies

Ingredients
1 cup (2 sticks) butter
1 cup light brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 (10-ounce) bag toffee candy bits
1 cup oatmeal
1 cup sweetened flake coconut
1 cup chopped whole, skinned almonds

Instructions
Preheat oven to 350 degrees F.

Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift
flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits,
oatmeal, coconut and nuts.

Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.

Go to the store, buy a bag of pre-made tollhouse cookies, open package, bake according to instructions, serve as if you made them from scratch. Voila!

Go to grocery store and buy a bag of Keebler Cookies. I like the soft & chewy chocolate chip ones myself. I love these, espeacially since it's hot outside and I hate to use the oven when it's hot.
Chocolate Fudge Oatmeal Cookies
INGREDIENTS:
2 cups granulated sugar
1/2 cup evaporated milk
2 tablespoons cocoa
4 ounces butter
1 teaspoon vanilla extract
1/2 cup chopped pecans
2 1/2 cups quick-cooking oats
PREPARATION:
Combine sugar, milk, cocoa, and butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla and chopped nuts. Add oatmeal and stir to blend thoroughly.
Drop by teaspoonfuls onto waxed paper. Makes about 4 dozen no bake chocolate oatmeal cookies.

Easy Peanut Butter Cookies-1 cup peanut butter, 1 cup sugar (plus some extra for coating), 1 egg. Mix all three together, roll into balls, coat with extra sugar, flatten with fork. Bake at 350 degrees for 8 minutes.

My favorite from way back when....

JAM BARS
1 1/2 cups sifted flour
1/2 teaspoon baking powder
1/2 cup butter
1/2 cup sugar
1/2 teaspoon almond extract
1 egg
3/4 cup jam or preserves (i use orange marmalade)
1/2 tsp cinnamon
1/4 tsp ground cloves
Sift together; flour and baking powder. Set aside. Cream butter, sugar and almond extract; beat in egg thoroughly. Add sifted dry ingredients and stir to blend. Spread a little less than half the dough into a greased baking pan. (about 11 by 7 by 2 inches) Mix jam with cinnamon and cloves. Spread over dough. Drop remaining dough in blobs over jam; spread carefully with small spatula. Bake in hot oven (400 degrees) for about 20 minutes. Put on rack to cool; cut into squares.
