* 4 (4 ounce) fillets tilapia (bream)

* 1/4 cup raspberry vinegar
* 1/4 cup honey
* 1 teaspoon yellow mustard
* 1/2 teaspoon dried dill weed
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 11x7 inch baking dish.
2. In a mixing bowl, whisk together the olive oil, raspberry vinegar, honey, mustard and dill weed.
3. Arrange the tilapia filets in a single layer in the prepared baking dish. Pour mixture over the fish filets, coating the filets evenly.
4. Bake in a preheated oven, uncovered for 20 minutes or until fish is flaky with a fork.

Goes great with rice vegies and white wine (or white grapeor cranberry juice).

drizzle on a little olive oil and shake on your favorite herbs and spices. Mrs. Dash has some great combinations. Bake it in the oven at 350 for 15-20 miutes or unitl done.
lightly breaded (breading and grated Parmesan mixture) stick in oven (on three fifty) till ready put on top of risotto rice
Easiest way, I say just broil it and throw on some paprika, basil, and parsley.
Easy but a bit more, try this:
put fish on a baking pan and cover with a melted butter/wine/lemon juice mix (probably white wine), some fresh basil and other seasonings to your taste (I like thyme and parsley ground up with a bit of onion powder). Cover with foil. Place in 450 degree oven in a spot far from burning coils (if electric) for about 13 minutes, and then take the foil off and let darken a bit for about 3 or so minutes.

you can cook it on a george foreman if you have one with some cajun seasoning. you could even use a griddle
I set my oven for 350 degrees. I pull out a glass baking dish and place my fillets in it. I cover one side with herbs, and then I flip it over and do the other side. You can use whatever herb that you like. Or if you want butter, use a little bit of butter on each. Then, cover the pan in foil and place in the oven. I can't remember how long I baked my fish for, but you will be able to tell if your fish is done by taking a knife and slicing just a little bit off. If it flakes, it is done; also, if it is all white, that is another sure fire way to tell.

1 1/2 lbs. Rain Forest Tilapia fillets
In a medium skillet, saute the celery, onions and sweet red pepper in butter until tender. Add the salt, pepper, tarragon, basil and milk; mix well. Cook for 1 minute, stirring constantly until thickened. Add the cheese and stir until melted. Do not boil. Rinse the Tilapia fillets in cold water and drain thoroughly. Place the fish in a 12 x 8 x 2 inch baking dish; spoon the sauce evenly over the fish. Bake at 425 degrees for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork. Serves 4.
