boil them cool them down under running water and add in a bowl with thinly sliced onion olive oil and red wine binnegar and season .
nice side for grilled meat
I like to boil them, and then mix them in with boiled, sliced potatoes. Add some parsley, oregano, or whatever spices are your favorite to the mix.
Im takin up a Culinary class in highschool (its a trade school) and i just got to make the best dish ever. Shock some tomatoes to make sauce, mix em with chicken stock, and put em in a pan with a lid over it on low heat. Take the green beans and broil them, then put em on the plate and pour the sauce over them its really really good.
I have a great recipe......cut the green beens and boil them....get some french fried onions, cream of mushroom soup and cream of celery soup. Chop and saute a red onion. cook and dice one pack of bacon. Stir everything together except the french fried onions (you can get them in a can at the store) After everything is stirred together in a casserole dish top it off whith the french fried onions and bake for a half hour or so at 350 degrees. You will have the best fresh green been casserole ever. Honestly....now I want to cook some!...
Marinate them and then grill them in a Wok made for a grill.

This technique applies all vegetables.
you cook , you shock cool ,and then you cook again.
You will need:
Fresh green beans trimmed of their strings
1) -anything but green-bell pepper cut into thin strips
2 or more Tablespoons fresh chopped garlic
olive oil
A decent saute pan
a large bowl of ice water
pair of tongs
How it's done :
In an appropriate sized pot bring about 3 inches of water to a boil , add a teaspoon or so of salt
Reduce heat to medium and add the beans\
while they are still green and crunchy use your tongs to place them in the bowl of ice water- this stops the cooking process
meanwhile..... heat up your saute pan and when hot add enough oil to cover the bottom
add your peppers -stir or toss as needed
when the peppers start getting limp add the garlic
when you can smell the garlic add your green beans- the water in the beans will cool down the pan and prevent the garlic from burning
add salt and pepper to taste , mix so it looks nice and serve.

Fresh green beans ( cleaned and cut)
Small new red potatoes( if real small leave whole. if medium size cut in half)
1 bunch of green onions (chopped)
bacon cooked and cut up
garlic clove (minced)

Put all ingredients in a medium sauce pan and add water to where the it covers the ingredients. bring to a boil and then turn down to medium high and cook for about 20 minutes. green beans should be cooked to just tender -not mushy
Tip: 1/8 teaspoon of chicken boullion can be subsituted for salt if desired

I always fix the ham and potato recipe that someone already put down for you, it's delicious. But I also like to parboil my green beans. (boil for about 3 minutes) then put them immediately in an ice bath to stop the cooking process. In the mean time, melt a couple pats of butter in a saute pan or skillet and put in some minced garlic and shallots (1 clove of garlic and 1/2 - 1 shallot depending on size) when garlic and shallots are soft, drain beans and place in the skillet to saute for a few minutes. Before taking out of the pan sprinkle with sesame seeds and cook for a minute more to bring out the nutty flavor of the seeds. Be sure you salt and pepper them also...they are delicious, wonderfully green and healthy!
blanch green beans and then shock with ice water... set aside.
In a large skillet or wok saute slice mushrooms and finely slice purple onion... when they are tender add green beans with kosher salt and crakced black pepper and about a table spoon of balsamic vinegar.. let cook for about 5 minutes, at the last add a few clove of crushed garlic.
This recipe was served at a dinner I attended last week and it was delicious..
