The roux is hard to make. You can however buy roux, the best kind is Savioe's Dark. Cook onions, bell pepper and garlic till soft, add desired water depending on how much you will be making. Bring water to a rapid boil, put in Roux, (see label for how much to use). Make sure that you stir constantly. Do not let the Roux burn or stick to the bottom. Once Roux is all disolved, add a whole cut up chicken, a package of sausage (cut up) and let cook on medium heat for about 2 hours, I usually add seasonings to taste as I am cooking.
