If I had to guess, I would say to use only 1 cup. Maybe the recipe was counting on you using a smaller pudding box. (I hate the word pudding by the way). I definately would not use 3. Maybe try 1 1/2 to be safe.

Use 1 cup of milk for the pudding; it will be a thicker consistency for the filling of the boston cream pie...but that's what the recipe calls for.
