Fancy enough for company; easy enough for every day. Better if made in the morning and chilled in the refrigerator until dinner. Delicious plain or can be topped with fruit after chilled. 1 c. graham cracker crumbs 1/4 c. sugar 2 (8 oz.) pkgs. cream cheese, softened 1 (14 oz.) can sweetened condensed milk 3 eggs 1/4 tsp. salt 1/4 c. lemon juice
Preheat oven to 300 degrees. Combine melted butter, crumbs, and sugar. Press them around 9 or 10 inch pan. Beat cream cheese until fluffy. Beat in condensed milk, eggs, and salt until smooth. Stir in lemon juice. Pour into prepared pan. Bake for 50-55 minutes or until cake springs back when lightly touched. Cool and chill.

Creamy Cheesecake

1 (9 inch) prepared graham cracker crust
16 ounces cream cheese
2 eggs
3/4 cup white sugar
2 teaspoons vanilla extract
1/2 teaspoon grated lemon zest



DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Beat softened cream cheese slightly. Add eggs, sugar, vanilla, and lemon zest. Beat until light and fluffy. Pour mixture into crust.
Bake at 350 degrees F (175 degrees C) until firm, about 25 minutes. Let cheesecake cool then top with cherry or blueberry pie filling, if desired. Refrigerate for at least 8 hours before serving
Sour Cream Cheese Pie

9 or 10 inch graham craker crust
1 large and l small pkg. cream cheese
2 eggs
3/4 cup sugar
1/2 teaspoon vanilla
l pint sour cream

Filling:
Blend in one egg at a time into your softened cream
cheese. Beat at medium speed, add and blend in 1/2
cup sugar and 1/2 teaspoon vanilla. Fill crust and
bake in preheated 350 degree oven for 20 minutes.

Topping:
Mix together sour cream and 1/4 cup sugar. Pour over
baked filling. Turn off oven and return pie for 4
minutes. Cool and decorate with strawberries.
Refrigerate overnight.


This is my absolute favorite recipe, it's got a really creamy consistency, not dried out like the ones you buy in the store. It's my mom's recipe, and I've found it needs to bake a little longer than 20 minutes, but start checking it around then.
