Cream of Mushroom Soup
Cream of mushroom soup recipe is made with mushrooms, chicken broth, milk, and other ingredients.
INGREDIENTS:
8 ounces thinly sliced mushrooms
2 cups boiling water
3 chicken bouillon cubes or equivalent base or granules
2 tablespoons finely chopped onion
1/4 cup butter
3 tablespoons flour
3 cups milk
salt and pepper
PREPARATION:
In a large saucepan, combine mushrooms, boiling water, chicken bouillon, and onion. Bring to a boil; cover and simmer for 20 minutes.
Melt butter in another saucepan; blend in flour. Gradually add milk; cook, stirring constantly, until thickened. Add sauce to mushrooms and season to taste with salt and pepper.
Makes about 6 cups.

This is easy and way better than the canned stuff.
1/4 lb fresh mushrooms, chopped
1/4c diced onion
1/2 c sliced celery
2 c water or stock
2 c cream or nondairy substitute
2 T butter
2 T sweet rice flour (this is a gluten free recipe) I would think regular flour would sub equally.
salt & pepper to taste.
simmer veggies in stock in saucepan, covered for 20 min.
Cool slightly and remove veggies to blender/food processor.
process briefly and return to stock.
melt buter is a different saucepan, add flour. stir until smooth.
mix cream into stock and pourslowly into butter-flour mixture. Cook,stirring constantly, until boils. Remove from heat and season to taste.
Makes 4.5 cups.

Lots of great recipes can be found in 'special diets' cookbooks.
If you are using dried mushrooms, soak them before hand. If they are fresh I would saute the mushrooms with some shallot, or onion if you prefer, butter salt and pepper (I don't like olive oil with a cream soup). When they are looking done, deglaze (pour onto hot pan) the pan with a little white wine and pour some cream in. Lower the heat and and let simmer while stirring. Thats pretty much it. Add milk to thin it out, cook it down to thicken up. If this is too creamy for you, feel free to add some chicken stock to make it more like a traditional soup. Maybe add a little grated hard cheese like Manchego or aged Gouda.
