I have tasted a delicious version of tofu cheesecake, and I want to try and copy that, and be able to put fillings like strawberries and other stuff.
Answers:
CHOCOLATE TOFU CHEESECAKE
1 prebaked graham cracker crust
2 lbs. tofu
2 c. sugar, divided
6 (1 oz.) sq. semi-sweet chocolate
2 tsp. vanilla
1 tsp. almond extract
Pinch of salt
1/2 c. more sugar
Have crust ready. Drain tofu between 2 towels with a breadboard weight on top for about 20 minutes. Blend the drained tofu, 1/2 pound at a time, until smooth and creamy. With each 1/2 pound in the blender add 1/2 cup sugar. Pour all the blended tofu and sugar into a bowl.
Preheat oven to 350 degrees. Melt chocolate in a double boiler and add to the blended tofu mixture. Mix together well along with remaining ingredients. Pour this mixture into the prebaked crust, then bake for about 40 minutes. When chilled, top with fresh fruit.
FRENCH CHEESE CAKE
Serves: 12
Crust:
1 3/4 cups graham cracker crumbs
1/2 cup butter, melted
2 tablespoons sugar
Filling:
1 cup sugar
2 pounds cream cheese, softened
2 eggs
1 teaspoon vanilla
2 tablespoons cornstarch
1 cup sour cream
Preheat oven to 325 degrees.
Crust: Combine the crust ingredients. Mix well. Press onto bottom and sides of a greased 9-inch spring-form pan. Chill while preparing filling.
Filling: In a mixing bowl, beat cream cheese, sugar until smooth and light. Beat in eggs, vanilla and cornstarch, just until blended. Stir in sour cream. Pour mixture into prepared crust and bake 40 to 50 minutes. Cool. Refrigerate. Remove sides from pan.
As an option, cover the cheese cake with sliced fresh strawberries, raspberries, cherry pie filling, and other seasonal fruit.
Lemon Tofu Cheesecake Recipe

Ingredients:
***Crust:***
2 cups graham crackers
1/4 cup maple syrup
1/2 teaspoon almond extract
***Filling:***
1 pound firm tofu
1/2 cup sugar
1/4 teaspoon almond exact
1 tablespoon tahini OR almond butter
1/2 salt
2 tablespoons lemon juice
1/2 teaspoon lemon zest
2 tablespoons cornstarch dissolved in
2 tablespoons soy OR rice milk
Directions:
Crust: Preheat oven to 350*. Mix cracker crumbs, syrup and extract in bowl until moistened. Pour into 9? pie plate, press evenly to form crust and bake for 5 minutes. Cool while preparing filling. Filling: Blend all ingredients in food processor or blender until smooth (30 secs). Pour mixture into crust and bake until top is slightly brown, about 30 minutes. Cool and refrigerate until thoroughly chilled, about 2 hours. For no bake cake omit cornstarch mixture. Texture will resemble a cream pie.

1/2 c Refined soy oil
1 tb Vanilla extract
1 ts Almond extract
2 ts Arrowroot powder
TOPPING
3/4 c Apple juice concentrate
3 tb Arrowroot powder
6 c Fresh cherries (strawberries)
Blend granola and margarine together in bowl. Spread in oiled pie plate and bake at 350F for 5 min. Blend filling ingredients in blender until smooth. Pour into pie crust. Bake at 350F for 20 min. Mix 1/2 c of juice concentrate with arrowroot. Simmer strawberries with 1/4 c of juice concentrate. Add arrowroot mixture and simmer for 15 min more. Pour topping over cheesecake and cool before slicing.
